Ingredients:
- 2 cups long grain parboiled rice
- 4 large tomatoes (blended)
- 1 red bell pepper
- 1 scotch bonnet (optional, for heat)
- 1 onion (sliced)
- 3 tbsp tomato paste
- 2 cups chicken stock
- 1 tsp thyme
- 1 tsp curry powder
- Salt to taste
- 1/4 cup vegetable oil
Steps:
- Blend tomatoes, pepper, and scotch bonnet till smooth.
- In a pot, heat oil, sauté onions, then stir in tomato paste and the blended mix.
- Cook for 10–15 mins until thick.
- Add stock, spices, and bring to a boil.
- Stir in rice, reduce heat, and cook covered for 25–30 mins.
- Fluff with a fork and serve hot with grilled chicken or fried plantains.
