How To Make West African Style Jollof Rice

Turn up the flavor with this rich, tomato-based rice dish loved across West Africa. Perfect for family meals or weekend gatherings.

Ingredients:

  • 2 cups long grain parboiled rice
  • 4 large tomatoes (blended)
  • 1 red bell pepper
  • 1 scotch bonnet (optional, for heat)
  • 1 onion (sliced)
  • 3 tbsp tomato paste
  • 2 cups chicken stock
  • 1 tsp thyme
  • 1 tsp curry powder
  • Salt to taste
  • 1/4 cup vegetable oil

Steps:

  1. Blend tomatoes, pepper, and scotch bonnet till smooth.
  2. In a pot, heat oil, sauté onions, then stir in tomato paste and the blended mix.
  3. Cook for 10–15 mins until thick.
  4. Add stock, spices, and bring to a boil.
  5. Stir in rice, reduce heat, and cook covered for 25–30 mins.
  6. Fluff with a fork and serve hot with grilled chicken or fried plantains.
